The word comes from the Semitic root ʔ-m-n, which means to be firm, safe, and reliable. The same root gives أمان (safety), إيمان (faith), and أمانة (a trust placed in someone's care). An أمين is the person you can safely rely on, so the sense shifted to a formal keeper or custodian.
