The word comes from the root ص-ف-ق, which means to strike or clap the hands. In old Arab markets a sale was sealed when buyer and seller struck their palms together. صَفْقَة is a noun of single instance, so it first meant one such hand-strike, then the bargain that the strike confirmed.
