Etymology

Jumătate is inherited straight from spoken Latin, from dimidietatem, the accusative of dimidietas. That noun was built on dimidius, meaning half, itself a fusion of dis- (apart) and medius (middle). Centuries of regular sound change in Romanian reshaped dimidietatem into jumătate, the same process that turned civitatem into cetate and libertatem into libertate.
