Etymology
The choice sense comes from the Semitic root kh-y-r, tied to the ideas of good and of picking the better thing. The same root gives khayr, meaning good, and ikhtiyār, meaning selection. A separate, identically spelled word, khiyār meaning cucumber, was borrowed from Persian and is unrelated in origin. Context tells the two apart.
