Ficat comes from Vulgar Latin ficatum, a shortening of iecur ficatum, literally fig-fattened liver, a dish made by feeding geese figs before slaughter. Over time this phrase's second word pushed out the classical Latin word for liver, iecur, across most Romance languages. Romanian kept the Latin sound close to the original, while French wore the word down further to foie.
