Unchi comes from the Latin avunculus, meaning maternal uncle, which is a diminutive of avus, grandfather. Romanian dropped the middle syllables over time, a common pattern called syncope, turning avunculus into unchi. The same Latin word gave French oncle, which English later borrowed as uncle.
