قِتال is the verbal noun of the Form III verb قاتَلَ, "to fight someone." It is built on the Semitic triliteral root ق-ت-ل, "to kill." Form III often marks reciprocal action, so the basic idea of killing becomes mutual fighting or combat. The root is shared across the Semitic family but has no Indo-European source.
