Etymology

Arabic borrowed the place name المكسيك (Mexico) from Spanish México, which in turn comes from Nahuatl Mēxihco, the old name of the Aztec capital. Arabic then built the adjective by adding the nisba suffix -iyy, the standard tool for turning a place name into a word meaning 'of' or 'from' that place. So the word is a foreign root plus a native Arabic ending. There is no Proto-Indo-European root behind it, since the name's deepest layer is Nahuatl, not an Indo-European language.
