Δίχως comes from the ancient Greek adverb δίχα, meaning 'apart' or 'in two parts', with the adverbial ending -ως attached later by analogy with χωρίς. Δίχα itself is tied to δύο, 'two'. Over time the sense shifted from 'apart, separately' to the modern meaning 'without', so a thing set apart from something became a thing lacking it.
