Εκβιασμός is the noun form of the verb εκβιάζω, built from the prefix εκ- (out, from) and βιάζω (to force), itself from βία (force, violence). The suffix -σμός turns the verb into an abstract noun naming the act, so εκβιασμός literally denotes the act of forcing something out of someone. The word entered its modern legal and everyday sense, extortion or blackmail, from this same image of coercion.
