Τομάρι comes from the Byzantine Greek τομάριον, a diminutive built on ancient Greek τόμος, meaning a piece cut off. That noun in turn comes from the verb τέμνω, to cut. The word originally named a hide cut from a slaughtered animal, and it kept that literal sense while also picking up a rough, insulting use for a person.
