Καθορίζω comes from the prefix κατά ("down, thoroughly") joined to ὁρίζω ("to bound, mark a limit"), itself from ὅρος ("boundary, limit"). The κατά- prefix adds a sense of completeness, so the compound originally meant something like "to bound off thoroughly." Over time this narrowed to the abstract sense of fixing or specifying something precisely, which is the core modern meaning.
