Etymology

Greek borrowed φεστιβάλ directly from English "festival" in the 20th century, keeping the foreign spelling and sound. English got the word from Old French "festival", which traces to Late Latin "festivalis", an adjective built on Latin "festum" (feast, holiday). Because it entered Greek as a ready-made loan, the word never took native Greek endings and stayed indeclinable.
