Etymology
Romanian borrowed "cartof" from German "Kartoffel" in the eighteenth or nineteenth century, as the potato spread as a crop across Central and Eastern Europe. "Kartoffel" itself came from Italian "tartufolo", a diminutive of "tartufo" (truffle), because early growers thought the round tubers looked like truffles. So the word's history tracks the vegetable's journey from Italy to Germany to Romania, not a native Romanian coinage.
