Romanian "ou" descends from Latin "ovum", the standard word for egg in classical and vulgar Latin. Romanian kept the core vowel skeleton of the Latin word while the intervocalic "v" dropped out over time, leaving the diphthong "ou". This is a regular pattern in Romanian, where Latin words with intervocalic "v" often lost that consonant.
