Viață comes from a Vulgar Latin form vivitia, built on vivus, meaning alive. This root is distinct from the classical Latin word vita, which also meant life but took a different path into Romanian: it became vită, which now means cattle or livestock. So the everyday word for life and the word for farm animals are, oddly, etymological cousins.
