بطاطا is a loanword, not a native Arabic root. It traces back to the Taino word batata, the name for the sweet potato in the Caribbean, which Spanish colonizers picked up as batata. From Spanish and French the word spread into Arabic, where بطاطا came to mean the common potato rather than the sweet potato. Because it entered Arabic as a foreign noun, it does not fit the usual triliteral root pattern.
