نادِل comes from the Arabic root ن-د-ل (n-d-l), whose verb نَدَلَ means to hand something over quickly or to pass an object from one person to another. نادِل is the active-participle form, so it literally means "one who hands things over," a sense that narrowed over time to the specific job of serving food and drink.
