Αληθεύω comes from the adjective αληθής, true, joined with the verbal suffix -εύω, which turns a noun or adjective into a verb of being or acting. Αληθής itself breaks down into the negative prefix α- and λήθη, forgetting or concealment, so a true thing is literally one that is not hidden. The verb keeps this sense: to be true, or to speak in a way that matches reality.
