Απ' is the elided form of the Ancient Greek preposition ἀπό, which meant off or away from. Speakers drop the final vowel before a word starting with a vowel, or often just before any word in casual speech, and mark the drop with an apostrophe. The core sense of separation or origin has stayed stable for close to three thousand years.
