Πιάνο is a direct borrowing from Italian piano, itself a shortening of pianoforte. That compound joined piano ("soft") and forte ("loud"), naming the instrument's ability to vary volume, unlike the harpsichord. Italian piano descends from Latin planus, meaning flat or level. Greek took the word into the neuter -ο noun class, so it now declines like a native Greek noun.
