Etymology

Φτυάρι comes from the medieval Greek φτυάριον, a diminutive of the ancient Greek πτύον, a shovel-shaped fan used to winnow grain. Over time the initial π shifted to the φτ- cluster, and the -άρι ending, common in Modern Greek for tools and small objects, fixed itself onto the word. The meaning stayed close to the original: a flat-bladed tool for moving loose material.
