Inimă comes from Latin anima, meaning breath or soul, not from cor, cordis, the usual Latin source for "heart" in other Romance languages. Romanian shifted the word's meaning from "soul" to "heart" over time, while the sound changed from anima to inimă. This makes Romanian an outlier among Romance languages, which mostly use descendants of cor (Italian cuore, French cœur, Spanish corazón).
