Etymology
مَقْلِيّ is the passive participle of the verb قَلَى (qalā), which means to fry or roast food in a pan. The root ق ل ي is native to Arabic and its Semitic relatives, and it has kept the same culinary sense for centuries. Because the final root letter is weak, the participle contracts to a doubled ي instead of the regular مفعول shape.
