مُنْتِج is the active participle of the Form IV verb أَنْتَجَ, 'to produce,' built on the triliteral root ن-ت-ج (n-t-j). The root's core sense is 'to yield' or 'to result,' originally used of animals giving birth or offspring appearing. Form IV adds a causative meaning, so the verb means 'to bring about a yield,' and the participle names the one who does that: a producer.
