Etymology
The verb comes from Latin arare, meaning to plow, one of the oldest agricultural verbs in the Romance languages. Romanian kept it almost unchanged, unlike French, which replaced it with labourer. Arați is simply the second person plural present form: the stem ar- plus the class-I verb vowel plus the plural ending -ți.
