Uscat comes from Latin exsiccatus, the past participle of exsiccare, meaning to dry out completely. Exsiccare is built from the prefix ex- (out, thoroughly) plus siccare, a verb formed on siccus, meaning dry. The same Latin root gave many Romance languages their basic word for dry.
