The verb builds on ασφαλίζω, itself from the adjective ασφαλής, meaning safe or secure. That adjective comes from the negative prefix α- and the ancient verb σφάλλω, meaning to trip or make someone fall. So something ασφαλές is literally something that will not make you stumble. The prefix εξ- adds the sense of thoroughness, giving εξασφαλίζω the meaning of making something fully secure or locked in.
