Borrowed into Modern Greek from Italian «cappello» (hat). The Italian word descends from Late Latin «cappellus», a diminutive of Latin «cappa» (cap, cloak, head-covering). Greek thus acquired the term through Italian maritime and commercial contact rather than inheriting it from Ancient Greek.
